To install Project Server 2007 on Windows Server 2008, you need to first, download WSS 3.0 SP1 and Office Server SP1 of the right edition (x86 or x64) and then, extract both in /UPDATES folder of Project Server 2007 installation folder. Then you may simply run the setup.exe from the root of the installation files. That's it.
